- 2 artichokes
- 4 tbsp Guénard French almond oil
- 2 tbsp rice vinegar or wine vinegar
- 1/3 tsp smooth mustard
- 2 pinches curry powder
- Salt, pepper
Trim the artichoke stems and stalks. Remove the outer leaves.
Place your artichokes in the basket of a pressure cooker and start cooking over a high heat. When you hear whistling, reduce to a medium heat and cook for 10 minutes (15 minutes if your artichokes are very large).
While they are cooking, make the vinaigrette. Start by mixing the vinegar and mustard together, add the salt, pepper and curry powder, and finish by adding the almond oil.
Your artichokes are ready to serve!
