Pistachio ice cream

Ingredients (for 4 people):

Ice cream base:

  • §  100g milk powder

    §  500g sugar

    §  100g glucose

    §  2L full-fat milk

How to make your own pistachio ice cream:

For the ice cream base, mix the milk powder, sugar, glucose and full-fat milk. Heat the mixture while stirring. Allow to cool.

In an oven preheated to 160°C (fan bake: 150°C), separately roast the pistachios (15 minutes approx) and almonds (20 minutes approx). Stir the nuts regularly with a spoon. Allow to cool, then grind finely.

Once cool, mix in the sugar. Using a whisk, mix in the peanut and pistachio oils to form a rough paste.

Gently mix the pistachio/almond paste and ice cream base together. Place in the fridge.

Once the mixture is cooled and smooth, pour into an ice cream maker (which stirs the mixture constantly to prevent the formation of ice crystals).
