Gingerbread with dried fruit (vegan)

Ingredients (serves 10) :

  • 1 + 1/4 cups whole wheat flour
  • 3/4 cup rye flour
  • 1/2 packet baking powder
  • 1 pinch baking soda
  • 3 + 1/2 tablespoons brown sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons spice mixture (ginger, cinnamon, cloves, nutmeg)
  • 7 oz. plant-based milk of your choice (almond, rice, soy, etc.) (about  cup)
  • 3 tablespoons Guénard Hazelnut Oil or Guénard Pecan Oil
  • 2/3 cup maple syrup
  • 1 + 1/3 cups dried fruit or nut of your choice (hazelnuts, figs, apricots, etc.)

Preparation :

Preheat your oven to 355°F.

In a bowl, mix the flours, baking powder, baking soda, sugar, cocoa powder and spices.

In a second bowl, mix the plant-based milk, Guénard Dried Fruit Oil and maple syrup. Stir this into the first bowl, making sure there are no lumps.

Coarsely chop the dried fruit and add it to the mixture.

Pour into a lined cake pan and bake in the oven for about 40 minutes. Check regularly with the tip of a knife. Remove from the oven and let cool. Remove from the cake pan.
