- 4 large beets
- 150 g fresh goat cheese (Petit Billy)
- 1 tablespoon heavy cream
- 1 splash Guénard Fruity Walnut Oil
- Walnuts, coarsely chopped
- 1 bunch of chives
- Salt and pepper
In a bowl, mash the goat cheese, cream and oil with a fork. Season with salt and pepper. Add the chopped chives and walnuts. Cut the beets into very thin strips. Begin to assemble the “mille feuilles” by alternating layers of beet strips and goat cheese. Top it with a little goat cheese. Keep in the refrigerator until ready to serve. Decorate with some walnut slices.
